    Introduction

Rice is the most important food crop and a staple food for 40% of the world’s population. More than 90% of rice is grown and consumed in Asia. It accounts for a third of the total land area used for growing cereals and is unique among the cereals in that it can germinate and grow in water. However, rice can be and is grown in dry areas although, in developing countries, yields are much lower than in flooded or irrigated systems. There are twenty wild species of rice and two cultivated species – Oryza sativa (Asian rice) and O. glabberima (African rice).
